Bake this cinnamon spice cake from under-the-sea for beach themed parties and nautical gatherings! A kid-favorite design for a sweet and fun treat!
Ingredients
- 3 cups cake flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 2 1/2 tsp ground cinnamon
- 1 cup milk
- 1 1/2 tsp vanilla extract
- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 eggs
Directions
Preheat oven to 325°F. Prepare Octopus Baking Pan with baking spray containing flour and use a pastry brush to evenly coat the details of the pan.
Sift together flour, baking powder, salt and cinnamon. In a small bowl, stir together the milk and vanilla. Set all aside. Using a mixer with a paddle attachment, mix the butter on medium speed until smooth and creamy, about 30 seconds. Add the granulated sugar and continue mixing until light and fluffy, about 5 minutes, stopping the mixer occasionally to scrape down sides of the bowl. Add eggs one at a time, mixing well after each addition. Add the flour mixture in three additions, alternating with the milk mixture, until fully incorporated.
Pour batter into the prepared pan and spread evenly. Gently tap pan on a towel covered countertop to remove air bubbles. Place the pan on a baking sheet and bake for 65-75 minutes or until toothpick inserted into the center of the cake comes out clean. Cool cake in pan for 10-15 minutes and then carefully invert onto a cooling rack. Let the cake cool completely before serving. Decorate as desired.

I think that this recipe is legit. The first time that I tried this recipe, it came out super fast and easy, which you think would be great! Long story short, I was not expecting it to do that, and the whole cake slid out of the pan and broke on my counter. I also did not have the flour cooking spray, so I found a homemade cooking “goop” type concoction, made of equal parts oil, flour, and butter, which worked just as well. My second attempt has not yet come out of the oven, but I definetly would reccommend it. We plan to make a marionberry glaze for the octopus coloring and white chocolate chips for the little suction cups, along with graham cracker crumbles for the sand. It works really nicely, and would definetly reccommend-just be prepared for how amazing it is 🙂
Other recipes pr box cakes, do not fill this pan properly to get the full design. So, tried this recipe and got the full design. I like to experiment with this recipe by not adding a spice, or different spices, adding chopped fruit, chips, etc. It has become one of my go to recipes. Have fun with it. Note: in my oven takes a little longer to bake because of volume.
Perfect and delicious. Easy to make. Nice texture, not too heavy or sweet with a nice cinnamon flavor. Popped out of the pan with no trouble. I would definitely make it again.
